Banana and Avocado Bread

We're all very used to banana bread but how about banana and avocado bread? 
Avocado has good fats  in them and this will help replace the oil/butter normally needed in baking too!

difficulty level:  easy
preparation time:  15 mins
​cooking time:  50 mins
​makes 1 lb loaf tin x2
Ingredients and Method
  • soak around 80g raisins in a small amount of boiling water (just enough to cover), you can soak the raisins with a tea bag to add additional flavor if you wish, but this is optional
  • put around 300g bananas (ripe) and 1 ripe avocado, around 120g flesh,  in a mixing bowl, use a electric mixer to mash (this is much quicker than doing it manually) 
  • in another bowl, beat together 2 eggs , 1 tsp vanilla and     50g honey  
  • add the egg mixture to the banana mixture
  • mix well
  • fold in  175g plain flour, 2 tsp baking powder, 1 tsp bicarbonate of soda, 1 heaped tsp of cinnamon,    50g roughly chopped walnuts and the raisins  (together with the liquid)
*if you wish, instead of walnuts and raisins, you can replace with other dried fruit or chopped nuts, or even chocolate chips
  • preheat the oven to 175C
  • bake for around 45-50 mins until you can insert a toothpick/knife and it comes out clean (if your loaf tin is thick or you bake in one tin instead of two, you might need more time)
  • cool slightly before serving
