Berry Crumble

Ingredients and Method
Berry mixture
Place in a small ovenproof bowl
  • 80g raspberries (either frozen or fresh)
  • 80g blueberries (either frozen or fresh)
  • 160g rhubarb stalks, cut into 2cm lengths 
drizzle 1 tbs honey on top, mix well

Crumble mixture
Place in blender: 
  • 1 tbs melted coconut oil
  • 50g oats 
  • 20g  ground almonds 
  • 1/2 tsp cornflour 
  • cinnamon
  • 1 tbs honey
pulse until crumble-like consistency 

  • preheat oven to 200C (no fan) or 180C (with fan) 
  • spoon the crumble mixture over the berry mixture evenly 
  • bake for 30-40 mins or until the crumble is golden brown and the rhubarb is tender 
  • Cool for 5 mins 
Optional: Yogurt Topping
mix together:
  • 100g Greek yogurt or natural  yogurt
  • 1 tsp vanilla 
  • 1 tbs honey
