Easter Chocolate Meringue Cake

Easter is all about chocolate and eggs! 
difficulty level: medium
preparation time:  30 mins
cooking time: 2 hours
6 servings 
Chocolate Cake Base
Ingredients
melt
  • 50g butter
  • 85g dark chocolate, broken into pieces
add
  • 2 eggs
  • 1 yolk
  • 70g brown sugar
whisk together  with electric hand mixer for 5-8 mins until mousse-like consistency 

​fold in
  • 5g ground almond 
  • 45g plain flour 

preheat oven to 180C (no fan) 
bake for around 15 mins -while baking, prepare meringue topping
take out the cake
Meringue Topping
Ingredients and Method
whisk together until stiff peak
  • 3 egg whites
  • add in three additions: sugar or powdered sweetener equivalent to 100g sugar
  • cream of tartar
  • 10g cocoa powder (if you wish to add chocolate flavor to the meringue layer)
lower oven temperature to 160C (no fan) 
  • ​spoon the meringue mixture and spread on top of the cake 
  • return to oven and bake for a further 35-40 minutes until the meringue is golden
after baking, cool for about 30 mins before serving 
optional: dust with cocoa powder
