Lemon, Berries and Poppy Seed French Toast

I love French toast as I can  infuse the bread with so many flavors. 

Difficulty level: easy
Preparation time: 15 mins
Cooking time: 15 mins 
Ingredients 
  • 2 slices of seeded bread
  • 1 tbs chia seeds or flaxseed (some varieties have added dried fruit and those are fine too!)
  • 1 tbs poppy seeds 
  • 15ml lemon juice
  • 75ml milk or dairy alternative 
  • cinnamon
  • vanilla 
  • 30g berries (frozen/fresh, mixed)
  • honey/syrup
Method
  • in a shallow bowl, mix together the flaxseed/chia seeds, milk, cinnamon, vanilla, half of the berries (mashed slightly with a fork), lemon juice and poppy seeds,  stir well to thicken 
  • place a slice of bread in the mixture, soak for a few minutes on each side (you can use a fork to hold it down)
  • spray a frying pan with a little oil
  • place the bread on the frying pan
  • fry each side for about 1-2 mins until golden brown
  • in the meanwhile, soak the other slice of bread  
  • serve with the remaining berries, honey/syrup
