Risotto 5 Ways

Risotto is my signature dish! And it's reduced fat and it can be so versatile

difficulty level: easy 
cooking time : 1-1.5 hours
​serves: 2-3

Ingredients
  • 90-120g Aroborio rice
  • milk/dairy alternative
  • half to 1 stock cube (makes it more savory)--homemade or store-bought cube
  • flavor ingredient: see list for individual flavors below
  • meat: if you are making   a creamy white sauce, I suggest chicken/fish 
  • optional extra: cheese--pay attention to the amount 
creamy mushroom risotto
ingredients: mushrooms, onions, sweetcorn 
spinach risotto
ingredients: spinach, mushrooms, onions
optional: broccoli, peas, leek
creamy avocado risotto
ingredients:  avocado
optional: mushroom, onions
beet risotto 
ingredients: beet 
optional: mushroom,  onions
pea risotto
ingredients: pea, potatoes
optional:   leek,  onions, spinach, broccoli , sweetcorn
These are just some suggestions. Risotto is so versatile and so easy to make you can literally add whatever ingredient you want and still get a very nice meal! The good thing is, you don't even need to measure out ingredients, just go with your gut feeling!
Method
  • use a non-stick saucepan
  • put the rice in (don't worry, it looks like a tiny amount but I promise with all the extra ingredients, it will turn out to be a huge portion) 
  • ​add boiling water (just enough to cover the rice) 
  • add the stock , press with a wooden spoon to help it dissolve
  • after some of the water has evaporated, add milk/dairy alternative 
  • don't forget to keep stirring 
  • keep repeating adding milk and stirring, cover the saucepan with lid
  • in the meanwhile,  put the vegetables of choice and some milk/water (a small amount) in a blender, blend until combined
  • add to the saucepan , keep stirring 
  • it will take about 1 hour for the rice to get tender . If you don't want to keep standing next to the stove, you can choose to turn off the heat after you've added the blended vegetables and simply cover cover the pot with a lid  for about half an hour  until rice is tender  and liquid is thickened and absorbed
  • when    the rice is almost ready,  turn on the heat again, add any extras you wish e.g. cheese, sweetcorn, peas, meat etc.  ,  heat the rice and cook the meat/other extras
